I was recently lucky enough to attend the Mantra Group National General Managers Conference, where Top Shelf was invited to participate in the food service and display. Mantra’s insistence on quality combined with our vision of excellence made us a fantastic team, and we look forward to working with them in the future.
Corporate Event for an Industry Leader
Mantra Group is a leading accommodation provider, boasting properties throughout Australia, New Zealand, Bali and Fiji. Its brands Mantra, Peppers and Breakfree are renowned for setting the bar for excellence in hospitality. The National General Managers’ Conference 2013 was held at picturesque Kingscliff, and hosted over 150 General Managers and Group Executives from around the country. Mantra on Salt Beach and Peppers Salt Resort and Spa were displayed to their charming best over two and a half days, and Top Shelf Concepts was on hand to provide an excellent display to match the delectable menus put together by Executive Chef Martin Glutz and his team.
Buffet Displays Showcase Fine Food to Degree of Excellence
The delicious food service throughout the conference included themed meals such as a poolside party dinner buffet and an Expanding the Senses afternoon tea. The creative service solutions provided by Top Shelf Concepts afforded Mantra’s creations the visual impact they deserved, with a cost-effective use of space that eliminated the need for a food overload. This included examples such as mouth-watering French macrons, whose colourful display was set off perfectly by alternating heights of round buffet risers. The prawn and hibiscus salad was served up wholesome and fresh in the Rosseto Bamboo Bowls, and the quaint home-made lemonade was delightfully enticing on the Rosseto Hexagon buffet risers, the glass bottles and striped straws adding to the charm of the All-Time Favourites afternoon tea.
Creative Food Presentation at its Best
Having previously worked as a chef for Mantra Hindmarsh Square in Adelaide, I understand how important it is that their food meets standards of excellence in quality and presentation. I worked closely with Peppers Salt Food and Beverage Manager Jim Logan, and Group Food and Beverage Director Scott Robertson to find the best way to showcase the food masterpieces in the way they deserved.
I would like to offer a warm thank you to Restaurant Manager Sarah Smith from Mantra Legends Surfers Paradise, who was a great help to me in the extensive planning and preparation for this event. In addition to a punchy presentation, it was important that the food service equipment was easy to assemble and quick to take down, so our products from the Rosseto and Top Style range were the perfect solution.
Aside from the food, conference highlights included SQ Restaurant at Mantra Hindmarsh Square winning the Mantra Group Award for Food and Beverage Outlet of the Year, and their General Manager Tim Reese-Jones being awarded the Regional General Manager Award. I would like to extend my congratulations to the hardworking team at Mantra Hindmarsh Square, with a special mention to my former Executive Chef David Farmer, who has led his restaurant to victory for three out of the last five years.
All in all, it was a highly successful event and a very enjoyable experience. Top Shelf Concepts and Mantra Group’s mutual commitment to quality food service makes us an ideal fit for an ongoing partnership, and I look forward to offering them creative food presentation solutions in the future.
